Rubies in the Rubble Aquafaba Mayo

Rubies in the Rubble make condiments with a conscience. They take ingredients that are traditionally the wrong shape, size or colour (and would otherwise be binned) and make them into award-winning relishes and ketchups. They recently added something pretty exciting to their line-up, vegan mayo.

Yes, you read that right, vegan mayo.

Vegan Mayo

It’s made with aquafaba which is the protein-rich water left over from cooking chickpeas. This is a fantastic option for anyone with an allergy or intolerance to eggs and of course, the vegan community. I’ve just realised, it’s also very handy for those of us who’re pregnant and prefer to avoid regular mayo throughout pregnancy.

Aquafaba Mayo Vegan

The mayo is smooth, creamy and a really good substitute to regular mayonnaise. I really enjoyed testing it out and I’m sure I’ll pick up another jar when this runs out. It has a slight citrus flavour to it and works really well on burgers and in sandwiches. I also like to add a blob into a bowl and then mix in some garlic.
